微臭,但无霉败的臭气;有引湿性,是以胰蛋白酶、胰淀粉酶、胰脂肪酶为主所组成的多种酶的混合物,水溶液煮沸或遇酸即失去酶活力。本品在中性或弱碱性环境中(酸碱度6.8~8.5)可促进蛋白质、淀粉及脂肪的消化。有吸湿性。溶于水呈微浑溶液,不溶于乙醇和乙醚。酶反应:能转化不少于25倍量的淀粉成为糖和不少于25倍量的酪蛋白(在5分钟内,相当于在30分钟内150倍)。其最大活力在中性或微碱性介质中。矿酸或过量氢氧化物或碳酸盐使之失活。 |
